Love Jerky and love hot foods? well this is the recipe for you!

Ingredients:

1KG your choice of meat – Venison is great

1 cup soy sauce

35ml apple cider vinegar 

2 tablespoons freshly cracked pepper

2 teaspoons chili powder

3 teaspoons Cayenne Powder

2 teaspoons Paprika 

1 teaspoons Cumin

1 teaspoons Onion Powder

2 teaspoons Garlic Powder

1/2 teaspoons Celery seed

2 teaspoons Chilli Flakes

Method:

1. Cut your meat into ½cm pieces. When cutting your meat always cut against the grain. This will mean the final product will be easier to eat. If you like your jerky chewy, then by all means cut your meat with the grain. For easier cutting, place your meat in the freezer until it has near frozen. This will ensure you are able to get more uniformed cuts.

2. In a large bowl combine all remaining ingredients.

3. Add meat and toss to combine. Cover and refrigerate for 24 hours.

4. Set Dehydrator to 70˚C.

5. Lay your meat across the Dehydrator shelves in a single layer.

6. Place in Dehydrator. Leave for 8 – 10 hours.

*Note – To ensure your jerky is safe to eat and we have killed any living pathogens in the meat, you will need to ensure your internal meat temperature reaches 65c. This is hard to achieve in a standard home dehydrator. To achieve this it is suggested to finish your jerky in the oven for 10 min at 135C. This will ensure your meat is safe to eat. 7. Store in airtight container in refrigerator for up to 1 week.
