Apple Chutney is a great condiment to go with Pork or wild game. Below is a great recipe for a quick and easy chutney.
Ingredients
- 1 Tablespoon Oil
- 1 stick of Cinnamon
- 4 star anise
- 1 ½ Tablespoon Ginger
- ¼ Teaspoon Chili flakes
- ½ cups Apple Cider Vinegar
- 3 Tablespoons Brown Sugar
- 3 Tablespoons white sugar
- 1 Teaspoon Cumin powder
- 1 Teaspoon Fennel seeds
- ¼ teaspoon ground pepper
- 500grams Chopped Apples
Method:
- Pour oil into a wide pan. Once oil is heated add stick of cinnamon and 4 star anise. When sizzling, add ginger. Fry for around 1 minute then add chili powder.
- Stir quickly then add chopped apples and apple cider vinegar.
- Add brown and white sugar, cumin powder, fennel, and ground pepper. Mix together until combined.
- Cover and let simmer until apples are tender.
- Continue to cook until the excess moisture has evaporated, and the chutney has thickened. The mixture will have a very lovely aromatic smell.
- Remove the star anise and cinnamon stick then mash half of the chutney. This can be done with a folk or spatula.
- Remove from heat, once cooled enjoy!
- Any left-over chutney can be stored in a clean dry glass jar. It will have a shelf life of around 3 months.
