
Super easy and straight forward recipe for Pancetta. What is Pancetta, besides something that is super tasty. Pancetta is a cured pork belly.
Its similar to bacon but not smoked and the cure and drying time is a lot longer than normal bacon.
Ingredients:
- 1074g Pork Belly
- 26.8g – Kosher Salt
- 2.6g Cure #2
- 20g Nutmeg
- 20.4g Cracked black pepper
- 12.9g Thyme
- 11.8g Brown sugar
- 46g juniper berries crushed
- 1g Bay leaves ground
Dry rub:
- 2 Tbsp. cracked black pepper
- 2 Tbsp. Chilli flakes
- 5 Bay leaves ground
Method:
- Mix all dry ingredients together.
- Cover the pork belly entirely with the dry mixture.
- Place in airtight zip lock bag or vacuum seal and put in the fridge for 7 days.
- Turn the bag every 24 hours.
- After 7 days remove from the bag and rinse, pat dry and rub with cracked pepper, chilli flakes and ground bay leaves.
- Weigh the pork belly and capture the current weight.
- hang in your chamber for around 3 – 4 weeks or until 25% weight loss is achieved.
